LE SALPE IN CROSTA DI PATATE AL TIMO...


Si tratta di un pesce povero dalla carne bianca e corposa, che tende a seccare leggermente, quindi bisogna cucinarla in preparazioni che ne garantiscano una certa umidità.... Io le ho fatte, come da sempre, in crosta di patate... purtroppo (e mi scuso) una mano veloce e furba si è appropriata di qualche rondella di patata prima della fotografia!!! A casa mia succede pure questo...... 

INGREDIENTI per 4 persone:

4 salpe da circa 250/300g
4 patate grandi
2 spicchi di aglio
1 bicchiere di vino bianco secco
timo essiccato
sale - olio extravergine - pepe nero

Squamate ed eviscerate le salpe, lavandole poi molto accuratamente... asciugatele e tenetele da parte. Sbucciate le patate, lavatele e tagliatele a rondelle di circa 1/2 cm; la metà delle patate disponetele in una teglia da forno unta di olio: salate leggermente. Sopra le patate sistemate le salpe dentro le quali avrete messo un pò di aglio tritato. Ricoprite con le restanti patate ed irrorate di vino e di un filo d'olio, quindi salate e spolverizzate con il pepe nero macinato fresco e abbondante timo essiccato. Infornate a 220° a forno preriscaldato per circa 30/35 minuti. 

Ho servito questo piatto portando in tavola direttamente la teglia ed accompagnando con una insalata di finocchi crudi.

SALPS IN THE CRUST OF POTATOES WITH THYME

In my house this also happens ......

Ingredients for 4 people:

4 salps from about 250/300g
4 large potatoes
2 cloves of garlic
1 glass of dry white wine
dried thyme
salt - olive oil - black pepper

Scaled and gutted the salps , then washing them very carefully ... dry them and keep aside . Peel the potatoes , wash and cut into rounds about 1/2 cm, arrange half of the potatoes in a baking dish greased with oil : salt lightly . Over the potatoes arranged the salps in which you put a bit of minced garlic. Cover with the remaining potatoes and sprinkle with wine and a little olive oil , then sprinkle with salt and freshly ground black pepper and plenty of dried thyme . Bake at 220 degrees in preheated oven for about 30/35 minutes.

I served this dish bringing to the table directly and accompanying the pan with a salad of raw fennel .

ACCIUGHINE SU ISOLANA DI PATATE E CARCIOFI "MORETTO"...


Le acciughe sono fra i tipi di pesce che più mi piace... le adoro fritte, in crosta, nel pane, cotte nel limone, ripiene,... insomma in tutti i modi! Però..... questa è una delle ricette che preferisco in assoluto: trovo che si abbinino il modo particolarmente interessante con le patate e i carciofi...  Per me è decisamente sublime e spero lo sia anche per tutti voi...

INGREDIENTI per 4 persone:
1 kg di acciughe fresche
1 rametto di rosmarino fresco
1 rametto di salvia fresca
4 patate medie
3 carciofi "moretto"
1/2 bicchiere di vino bianco secco
olio - sale - pepe nero
farina integrale

Innanzi tutto private della testa le acciughe, togliete molto delicatamente con le dita la lisca centrale senza rompere i filetti, quindi sistemateli in una terrina alternando uno strato di acciughe con uno di salvia e rosmarino a pezzettini. Quando avrete terminato le acciughe, versatevi sopra molto delicatamente il vino bianco ed un paio di cucchiai di olio extravergine di oliva; coprite con un foglio di pellicola o di alluminio e lasciate in frigorifero a riposare per circa 12 ore (come faccio sempre io, preparo le acciughe la sera prima per il pranzo...). Pelate le patate e tagliatele a rondelle alte circa 1cm, quindi sbollentatele in acqua bollente salata per 5 minuti; pulite i carciofi e tagliateli a fettine sottili quindi sbollentateli per 3 minuti in acqua bollente salata. Prendete una teglia da forno e ungetela di olio extravergine, quindi spolverizzate con della farina integrale (io ne ho trovata una con la crusca molto grossa e ricca di fibre). Disponetevi sopra e rondelle di patata in modo da coprire interamente la superficie quindi salate appena; sopra le patate disponete uno strato  utilizzando la metà delle acciughe cercando di non mettere le erbette di macerazione e sopra le acciughine uno strato di carciofi sbollentati. Terminate con uno strato di acciughe: irrorate con un filo d'olio extravergine, spolverizzate con poco sale fino, del pepe nero macinato fresco e con una manciata di farina integrale quindi infornate a forno preriscaldato a 220° per circa 15/20 minuti (come sempre ricordo: controllate sempre la cottura perchè i tempi dei forni non sono tutti uguali) fino a che non si sarà formata una leggera doratura sopra le acciughe... non fatele cuocere troppo perchè altrimenti risulteranno stoppose... Servite subito oppure a temperatura ambiente: sono squisite!!! 

ISOLANA OF ANCHOVIES WITH POTATOES AND ARTICHOKE "MORETTO"

The anchovies are among the types of fish that I like ... I love them fried, crust , bread , cooked in lemon, stuffed , ... in short, in every way ! But ..... this is one of my favorite recipes ever: I find it particularly interesting how they match with potatoes and artichokes ... For me it is definitely sublime and I hope it is for all of you ...

Ingredients for 4 people:
1 kg of fresh anchovies
1 sprig of fresh rosemary
1 sprig of fresh sage
4 medium potatoes
3 artichokes " Moretto "
1/2 cup of dry white wine
oil - salt - black pepper
whole wheat flour

First of all, private head anchovies , very gently remove the central bone with your fingers without breaking the threads , then arrange them in a bowl , alternating a layer of anchovies with a sage and rosemary into small pieces. When you have the anchovies, very gently pour over the white wine and a couple of tablespoons of extra virgin olive oil , cover with a sheet of plastic or aluminum and leave in the fridge to rest for about 12 hours (as I always do , I prepare anchovies for lunch the night before ... ) . Peel the potatoes and cut into slices about 1cm high , then blanch them in boiling salted water for 5 minutes, clean the artichokes and cut into thin slices and then boil them for 3 minutes in boiling salted water . Take a baking pan and grease it with olive oil, then sprinkle with the wheat flour (I found one with very coarse bran and high fiber ) . Disponetevi above and washers potato to cover the surface completely, then just salt , place a layer over the potatoes using half of the anchovies trying not to put the maceration of herbs and anchovies over a layer of blanched artichokes . Finish with a layer of anchovies drizzle with extra virgin olive oil , sprinkle with a little salt and a handful of whole wheat flour and then bake in a preheated oven at 220 degrees for about 15 /20 minutes (as always remember : always check the cooking time because the ovens are not all equal ) until it has formed a slight gilding above the anchovies ... do not cook them too much because otherwise it will become stringy ... Serve immediately or at room temperature : they are delicious !

DELICATEZZA DI MOLO IN PADELLA SU TORTINO DI PUREA DI CAVOLFIORE E PATATE CON VELLUTATA DI CECI DELLA GARFAGNANA


Il molo è un pesce molto povero che ha una carne bianca e delicatissima... costa veramente poco ma è appetitoso e digeribile, adatto anche alle persone anziane e ai bambini! In questa ricetta ho voluto renderlo originale valorizzando le sue caratteristiche ed esaltarne il sapore... Provate questo piatto perchè è veramente buono.... 

INGREDIENTI per 4 persone:
1 kg di moli (scegliete quelli un pò grandi e non quelli piccoli da frittura)
400g di cavolfiore già lessato
2 patate 
500g di ceci della Garfagnana già lessati
olio extravergine - sale - pepe nero

Frullate il cavolfiore ancora caldo, ammorbidendolo con un cucchiaio di olio extravergine e un pò dell'acqua di cottura ancora bollente: il composto deve risultare morbido ma compatto perchè ci servirà come purea... Sbucciate le patate e tagliatele a rondelle alte un centimetro circa che farete cuocere in una padella antiaderente dove avrete messo un filo d'olio: quando inizieranno a friggere, aggiungete un bicchiere d'acqua fredda e portate a cottura regolando di sale. Nel frattempo riscaldate i ceci lessati, passandoli in una padella antiaderente con poco olio; poi metteteli nel mixer e frullateli bene aggiungendo un cucchiaio d'olio e un pò di acqua calda in modo da avere un impasto molto morbido; passare al setaccio aggiungendo un pò d'acqua calda all'occorrenza, fino ad avere una crema fluida e liscia. 
Sfilettate i molo con un coltello affilato (se non siete capaci o non avete il coltello adatto, chiedete al vostro pescivendolo di fiducia che lo faccia per voi) e tagliate ciascun filetto in tre porzioni con tagli obliqui e poi passateli in padella antiaderente con un filo d'olio (il pesce va prima messo dalla parte della pelle e solo dopo dalla parte della polpa); regolate di sale. Ora disponiamo nel piatto: mettete uno stampino quadrato al centro di un piatto capiente, e riempitelo fino a metà abbondante con la purea di cavolfiore lasciando qualche minuto a riposo in modo che la purea si assesti bene. Quindi togliete lo stampo e tutto intorno, molto delicatamente, versate con un piccolo mestolo la vellutata di ceci riscaldata appena (deve essere poco più di tiepida ma non bollente); disponete sopra la purea di cavolfiore alcune fettine di patata e ancora sopra alcuni tranci di molo belli caldi. Condite con un filo di olio extravergine di oliva e spolverate di pepe nero macinato fresco.

Ho accompagnato questo piatto goloso con dei crostini di pane integrale abbrustoliti leggermente nella stessa padella dove ho cotto il pesce...... 

GENTLY ON THE JETTY IN SKILLET PIE MASH POTATO AND CAULIFLOWER SOUP WITH CHICK GARFAGNANA

The pier is a fish that has a very poor white meat and delicate ... costs very little but is palatable and digestible , also suitable for elderly people and children ! In this recipe I wanted to make it original value to its characteristics and enhance the flavor ... Try this dish because it is really good ....

Ingredients for 4 people:
1 kg of moles ( choose ones a bit big and not small ones for frying )
400g of boiled cauliflower already
2 potatoes
500g chickpeas already cooked Garfagnana
extra virgin olive oil - salt - black pepper

Mix  the cauliflower is still hot , softening it with a tablespoon of olive oil and a little of the cooking water is still hot : the mixture should be soft but compact because it will serve as a puree ... Peel the potatoes and cut them into slices about an inch high that you will cook in a frying pan where you put a little olive oil : when they start to sizzle, add a glass of cold water and cook with salt . Meanwhile heated the boiled chickpeas , passing them in a pan with a little oil , then put them in a blender and frullateli well adding a tablespoon of olive oil and a bit of hot water in order to have a very soft dough , adding a bit to sift through hot water if necessary , until you have a smooth and fluid cream .
Fillet the pier with a sharp knife ( if you are not able or do not have the suitable knife , ask your fishmonger to trust to do it for you) and cut each fillet into three portions with miter and then put them in a pan with wire oil (the fish must first be put on the skin side and only after the flesh side ) with salt . Now we have in the pot : put a stencil square in the center of a large pot , and fill it up halfway abundant with cauliflower puree , leaving a few minutes to rest so that the puree settles well. Then remove the mold and all around, very gently , pour a small ladle the soup of chickpeas just heated ( to be little more than warm but not hot ) place over the mashed cauliflower and a few slices of potato slices over some still hot beautiful pier . Season with a drizzle of extra virgin olive oil and sprinkle with freshly ground black pepper .

I accompanied this dish delicious with pieces of toasted whole wheat bread toasted lightly in the same pan where I cooked the fish ......

ILGATEAU DI PATATE... quello classico!!!

Questa è la versione classica del gateau di patate: quella con il cotto e la  mozzarella come si prepara nel napoletano!!! Poi si può farcire con le melanzane grigliate e la scamorza affumicata, con le uova sode, il formaggio e il salame oppure con i peperoni passati in padella con la cipolla e le sottilette.... insomma a vostra fantasia!!! Io vi passo la ricetta tradizionale... quella che portavo a scuola per la ricreazione!!!

INGREDIENTI:

1kg di patate
2 uova
sale - pepe nero in grani
burro
pangrattato
200g di prosciutto cotto
200g di mozzarella (o provola dolce a fette sottili)
olio extravergine di oliva

Lessate le patate con la buccia in acqua salata, e quando saranno cotte, pelatele e schiacciatele con lo schiacciapatate. Fatele raffreddare, regolate di sale ed unite le uova, una spolverata di pepe nero in grani macinato fresco, e del pangrattato per dare la giusta consistenza all'impasto (questo dipende molto dalla qualità delle patate, comunque diciamo che indicativamente occorreranno un paio di cucchiai di pangrattato). Mescolate bene e poi dividete il composto in due metà. Stendete la prima metà in una teglia da forno precedentemente imburrata e cosparsa uniformemente di pangrattato: livellate bene la superficie delle patate e disponetevi sopra il prosciutto cotto tagliato a fettine sottili (c'è chi preferisce mettere il prosciutto a cubetti), e poi la mozzarella a fette. Ricoprite il tutto con l'altra metà dell'impasto di patate e livellate; quindi praticate con la forchetta alcuni fori, versate un filo d'olio che spalmerete delicatamente con un pennello da cucina e spolverate con il pangrattato. Sistemate sulla superficie del gateau, anche qualche fiocchetto di burro... Infornate a forno preriscaldato a 180° per circa 35 minuti fino a che la superficie del gateau risulti dorata e croccante. Sfornate e servite sia caldo che freddo.....

La bellezza di questa torta salata è che si può mangiare veramente ovunque: tiepida se siete a casa, ma a fette per la merenda a scuola, per la pausa pranzo in ufficio, al mare, in montagna, al lago, per il pic-nic con gli amici, sul treno,...... e ovunque la mangerete, farete venire l'acquolina in bocca a chi vi  guarda!!!! Garantito!!!!!


THE POTATO GATEAU

This is the classic version of the potato gateau: one with the cooked and the cheese as you prepare in Naples! Then you can fill with grilled eggplant and smoked, with hard-boiled eggs, cheese and salami or with peppers in a frying pan with the onion and slices .... in short, to your imagination! I will step to the traditional recipe ... what I brought to school for recreation!

INGREDIENTS:

1kg potatoes
2 eggs
salt - black pepper
butter
breadcrumbs
200g of cooked ham
200g mozzarella (or provolone sweet, thinly sliced)
extra virgin olive oil

Boil the potatoes in their skins in salted water, and when cooked, peel and mash with a potato masher. Let them cool, season with salt and add the eggs, a sprinkling of freshly ground black pepper, and bread crumbs to give the dough the right consistency (this depends greatly on the quality of potatoes, however, say that it will take approximately a couple of tablespoons of breadcrumbs). Mix well and then divide the mixture into two halves. Roll out the first half in a baking pan previously greased and sprinkled with bread crumbs evenly: good leveled the surface of the potatoes and arrange on top of the ham cut into thin slices (some people prefer to put the ham into cubes), and then the mozzarella sliced. Cover with the other half of the potatoes and leveled, then drill a few holes with a fork, pour a little olive oil that spalmerete gently with a pastry brush and sprinkle with breadcrumbs. Arranged on the surface of the pie, even some butter ... Bake in preheated oven at 180 degrees for about 35 minutes until the surface of the pie is golden brown and crisp. Remove from the oven and serve hot or cold .....

The beauty of this pie is that you can eat really everywhere: if you are warm at home, but on slices for school lunches, lunch break in the office, at the seaside, in the mountains, the lake, the picnic with friends, on the train, ...... and wherever you eat, you will make watering mouths of those who look at you!! Guaranteed!!

CROCCHETTE DI PATATA ALLA MENTA FRESCA..... il profumo inebriante della freschezza!!!

La menta è una delle piante aromatiche più facili da coltivare anche in vaso... praticamente viene su da sola: basta ricordarsi di annaffiarla ogni tanto!!! Il suo utilizzo è straordinario a partire dal te, ma si può usare in mille modi... Ne propongo uno che a casa mia ha sempre un gran successo: le crocchette di patate con l'aggiunta di menta fresca tritata!!!! Sono buonissime...

INGREDIENTI PER 4/6 PERSONE:

1,5 kg di patate
3 uova
150g di parmigiano grattugiato
mollica di pane raffermo grattugiata
una manciata di foglie di menta fresca
sale - pepe nero macinato fresco
olio per friggere

Lessate le patate in acqua salata fino a che non sarà facile bucarle con una forchetta; fatele intiepidire e poi sbucciatele, quindi passatele al passapatate. Sbattete le uova in una ciotola, salate e pepate ed aggiungete le patate passate a temperatura ambiente; incorporate il formaggio e mescolate con cura. Tritate le foglioline di menta, dopo averle lavate velocemente ed asciugate, ed incorporatele al composto. Aggiungete anche la mollica di pane fino a che la consistenza dell'impasto sia giusta: morbida e non troppo compatta. Formate le crocchette (noi le abbiamo fatte allungate per differenziarle da quelle normali), che passerete in altro pane grattugiato. Friggete in abbondante olio e una volta dorate, scolatele su un foglio di carta assorbente e servite immediatamente!!!

Queste crocchette sono veramente appetitose e potete usarle non solo come secondo piatto sfizioso, magari accompagnando con una bella insalata mista, ma anche un simpatico contorno ad una grigliata di carne o pesce oppure lo stuzzichino per l'aperitivo con gli amici!!! Insomma usatele come più vi piace.... e buon appetito!!!


NUGGETS OF POTATOES  WITH FRESH MINT .... the freshness in a dish!

Mint is one of the easiest to grow herbs in pots ... practically comes on by itself: just remember to water it every now and then! Its use is extraordinary from you, but you can use it in many ways ... I propose one that my house has always been a great success: potato croquettes with the addition of chopped fresh mint!! They are very good ...

INGREDIENTS FOR 4/6 PEOPLE:

1.5 kg of potatoes
3 eggs
150g of grated parmesan cheese
grated bread crumbs
a handful of fresh mint leaves
salt - freshly ground black pepper
oil for frying

Boil the potatoes in salted water until it will be easy to crack them with a fork, let them cool and then peel them, then pass through a masher. Beat the eggs in a bowl, add salt and pepper and add the mashed potatoes at room temperature, stir in the cheese and mix well. Chop the mint leaves, after washing and dry quickly, and embed them into the mixture. Also add the breadcrumbs until the consistency of the dough is right: not too soft and compact. Form the croquettes (we we made elongated to differentiate them from normal ones), you will spend in more bread crumbs. Fry in hot oil and once golden, drain on a paper towel and serve immediately!

These croquettes are really tasty and you can use them not only as a delicious main course, perhaps accompanied with a nice salad, but also a nice side dish to grilled meat or fish or as an aperitif appetizer with friends! So use them however you like .... and bon appetit!

FRITTELLINE DI BIETOLA.... un altro modo di mangiare la verdura!!!

Il mio orto inizia a dare i primi frutti: abbiamo mangiato già qualche fragola ed utilizzato le prime foglie di rucola per le bruschette con il pomodoro!!! Fra le piantine più generose, spicca la bieta (o bietola) con le sue tenere foglie carnose, dolcissime e verdissime......... siccome ancora non ce ne sarebbe a sufficienza per una torta salata, e la voglia di preparare qualcosa era tanta, io e il mio bimbo abbiamo raccolto un pò di foglie e ci siamo inventati queste frittelle piccole e sfiziose con le quali abbiamo cenato allegramente!

INGREDIENTI PER 10/12 FRITTELLE:

250g di bietola lessata
100g di farina
1 cucchiaio di parmigiano grattugiato
olio extravergine - sale - pepe
olio per friggere

Preparate una pastella con la farina ed acqua della consistenza della besciamella; quando sarà bella liscia, incorporate il parmigiano grattugiato, un cucchiaio di olio extravergine dolce (il nostro della Lunigiana è adattissimo), regolate di sale e pepate con pepe in grani macinato fresco. Strizzate bene la bieta fra le mani, tagliuzzatela grossolanamente con un coltello e  unitela alla pastella fino ad ottenere un composto omogeneo. Fate risposare almeno un'oretta, in frigo in modo che la farina leghi bene... Scaldate l'olio per friggere e quando avrà raggiunto la giusta temperatura, immergetevi piccole porzioni del composto aiutandovi con un cucchiaio (vi consiglio di tenere bene le distanze in modo che le frittelle non si appiccichino fra di loro). Friggetene poche per volta e non appena saranno dorate, raccoglietele con una paletta da fritto e disponetele su una carta assorbente; salate appena e servite belle calde!!!!

Ovviamente potete utilizzare anche altre tipologie di verdure, ad esempio gli spinaci o magari dei carciofi sbollentati........ ma secondo me, con la bieta risultano eccezionali!


BEET PANCAKES .... another way to eat vegetables!

My vegetable garden starts to bear fruit: strawberry and ate some already used the first leaves of rocket for bruschetta with tomato! Among the plants most generous, stands chard (or chard) with its tender leaves fleshy, sweet and lush green ......... even as there would not be enough for a pie, and the desire to prepare something was great, me and my baby we have collected some leaves and we came up with these small and tasty pancakes with whom we dined merrily!

INGREDIENTS FOR 10/12 PANCAKES:

250g of boiled chard
100g flour
1 tablespoon grated Parmesan cheese
extra virgin olive oil - salt - pepper
oil for frying

Prepare a batter with flour and water the consistency of the sauce, and when it will be nice and smooth, stir in the grated Parmesan cheese, a tablespoon of extra virgin olive oil cake (our Lunigiana is very suitable), season with salt and pepper to taste with freshly ground pepper. Squeeze well the chard in his hands, tagliuzzatela coarsely with a knife and add it to the batter until you get a homogeneous mixture. Fate risposare at least an hour, in the refrigerator so that the flour binds well ... Heat the oil for deep frying and when it has reached the right temperature, soak up small portions of the mixture with a spoon (I suggest you keep good distance so that the pancakes do not stick to each other). Friggetene few at a time and as soon as they are golden, collect them with a scoop of fried and place on a paper towel; just salted and served hot beautiful!!

Of course you can also use other types of vegetables, such as spinach or maybe some blanched artichokes ........ but in my opinion, with the beet are exceptional!

ZUCCHINE RIPIENE cotte al forno....

Un sapore squisito che mi ricorda moltissimo la mia infanzia: mia mamma le preparava spesso e le portavamo anche al mare per un pranzo gustoso e frugale da consumare fra un castello di sabbia e un bagno!!! Ce ne sono di tantissime versioni: questa è la versione di casa mia..... Ho già messo una ricetta di zucchine ripiene (vedi ZUCCHINE RIPIENE DI.... ZUCCHINE), ma questa è una ricetta storica e di famiglia!!!! 

INGREDIENTI PER 4 PERSONE:

4 zucchine piuttosto grandi
150g di prosciutto cotto
2 uova
100g di scamorza affumicata
2 cucchiai di parmigiano grattugiato
prezzemolo 
1 spicchio di aglio
sale - pepe in grani macinato fresco
pangrattato

Pulite le zucchine, togliete la parte laterale e svuotatele leggermente della polpa interna; lessate per un cinque minuti le "barchette" così ottenute e fatele poi raffreddare tenendole su un canovaccio pulito e asciutto. In una padella antiaderente riscaldate un filo d'olio ed insaporite con lo spicchio di aglio tritato finemente: aggiungete la polpa delle zucchine e fate cuocere per circa 5 minuti. In una ciotola versate la polpa delle zucchine, le uova, il prosciutto cotto tritato grossolanamente, la scamorza a tocchetti piccoli, il prezzemolo, il parmigiano; salate e pepate. Con questo composto riempite le barchette di zucchine che disporrete poi in una teglia rivestita di carta da forno. Cospargete le zucchine ripiene con il pangrattato ed infornate a forno preriscaldato a 180° per circa 40 minuti (come sempre la superficie deve essere dorata ma controllate perchè ogni forno ha dei tempi differenti). Potete servire le zucchine ripiene leggermente tiepide con verdure fresche in insalata e bruschette di pane, ma come dicevo prima, sono ideali anche a temperatura ambiente, specie se le consumiamo al mare, in campagna, in ufficio..... 

THE ZUCCHINI STUFFED baked

There are many versions: this is the version of my house ..... I've already put a recipe for stuffed zucchini (see ZUCCHINI RIPIENE DI..... ZUCCHINI), but this is a recipe historical and family!
INGREDIENTS FOR 4 PEOPLE:
4 courgettes rather large
150g of cooked ham
2 eggs
100g smoked
2 tablespoons grated Parmesan cheese
parsley
1 clove of garlic
salt - Freshly ground pepper
breadcrumbs
Peel the zucchini, remove the side and slightly empty them of the inner pulp, boiled for five minutes the "boats" thus obtained and then let them cool on a towel keeping them clean and dry. In a pan heat a little olive oil and seasoned with a clove of finely chopped garlic, add the pulp of the zucchini and cook for about 5 minutes. In a bowl, pour the pulp of the zucchini, eggs, coarsely chopped cooked ham, smoked cheese into small pieces, parsley, Parmesan cheese, salt and pepper. With this mixture fill the boats of zucchini you will place them into a baking tray lined with baking paper. Sprinkle the zucchini stuffed with breadcrumbs and bake in preheated oven at 180 degrees for about 40 minutes (as always, the surface should be golden but check because every oven has different times). You can serve the stuffed zucchini slightly warm with fresh vegetables in a salad and toasted bread, but as I said before, they are ideal even at room temperature, especially if we consume the sea, in the countryside, in the office .....

PADELLA DI CARCIOFI E GAMBERI...... sapore e leggerezza di stagione!!!

Dopo giorni infuocati politicamente come quelli appena trascorsi...... bisogna consolarci un pò almeno in cucina per digerire le cretinate politiche alle quali stiamo assistendo!!! Eccovi quindi questo piatto delizioso, e veloce per un secondo di stagione e pieno di leggerezza e sapore.....

INGREDIENTI PER 2 PERSONE:
4 carcioli
12 gamberi freschi
1 limone
1 spicchio d'aglio
olio - sale - pepe nero
vino bianco secco

Pulite i carciofi, eliminando le foglie esterne più dure, eliminate le punte e tagliateli in metà; togliete la barbetta interna e lasciateli in acqua acidulata con il succo di limone. Nel frattempo sgusciate i gamberi e privateli del filetto nero. Fate rosolare uno spicchio d'aglio schiacciato  in una padella antiaderente ed aggiungete i carciofi tagliati a fettine sottili: fateli rosolare a fiamma vivace, salate e pepate poi abbassate la fiamma e portate a cottura fino a che non saranno belli morbidi. Se in cottura si asciugano troppo, aggiungete un pochino di acqua fredda. Quando saranno cotti, sfumate con il vino bianco (ne basta mezzo bicchiere) ed aggiungete i gamberi: fate consumare bene a fiamma vivace e cuocete per un paio di minuti in modo che i gamberi non cuociano troppo e non diventino stopposi. Servite caldo magari accompagnando con qualche bruschetta di pane come ho fatto io ieri!!!


Pan-fried artichokes AND SHRIMP

After days fiery politically as those just passed ...... must be at least a little consoled in the kitchen to digest the crap policy to which we are seeing! So here's this delicious dish, and fast for a second season and full of flavor and lightness .....

INGREDIENTS FOR 2 PEOPLE:
4 carcioli
12 fresh prawns
1 lemon
1 clove of garlic
oil - salt - black pepper
dry white wine

Clean the artichokes by removing the tough outer leaves, remove the tips and cut them in half, remove the internal beard and leave them in water acidulated with lemon juice. In the meantime, shelled shrimp and privateli of black thread. Sauté a clove of crushed garlic in a pan and add the artichokes, cut into thin slices: brown them over high heat, add salt and pepper then reduce the heat and cook until they are soft beautiful. If cooking is too dry, add a little bit of cold water. When they are cooked, pour the white wine (you only need half a cup) and add the prawns: do consume well over high heat and cook for a few minutes so that the shrimp is not overcooking and do not become stringy. Serve hot accompanied with maybe some bruschetta bread as I did yesterday!

SPIEDINI DI GAMBERI E CALAMARI...

Molto semplici da fare, sono un secondo piatto invitante e divertente... adattissimo secondo piatto da offrire agli amici, accompagnando con qualche salsa ed una bella insalata mista...

INGREDIENTI PER 2 PERSONE:

250g. di calamari ad anello
250g di gamberi
1 limone 
4 cucchiai di pangrattato
2 cucchiai di parmigiano
1 cucchiaino di curry
Olio extravergine d’oliva


In una ciotola condite i calamari ed i gamberi sgusciati e privati del filo nero con il succo del limone e tre cucchiai di olio, lasciando macerare in frigo per un’ora. Preriscaldate il forno a 200°. Nel frattempo miscelate in un'altra ciotola il pangrattato con il curry, ed aggiungete il pesce mescolando bene in modo che si ricopra bene di pangrattato (non gettate via il liquido della marinatura). 
Ungete una teglia con un filo d'olio e preparate gli spiedini, alternando i calamari con i gamberi e disponeteli nella teglia. Versate il liquido di marinatura nel pangrattato rimanente, mescolate bene e ricoprite gli spiedini in modo che restino umidi e non si secchino durante la cottura. Mettete in forno per un 20 minuti circa, fino a che non saranno belli dorati, quindi servite subito belli caldi.

La particolarità di questo piatto è che il pesce risulterà molto croccante esternamente, ma morbido internamente..... una vera bontà!!! 


SKEWERED SHRIMP AND SQUID...

Very simple to do, they are a second dish inviting and fun ... very suitable  second course to be offered to friends, accompanying with some sauce and a mixed salad ...

INGREDIENTS FOR 2 PEOPLE:

250g. squid ring
250g prawns
1 lemon
4 tablespoons of breadcrumbs
2 tablespoons of Parmesan cheese
1 teaspoon curry
Extra virgin olive oil

In a bowl, seasoned squid and shrimps, shelled and deprived of the black wire with the lemon juice and three tablespoons of oil, leaving marinate in the fridge for an hour. Preheat oven to 200 degrees. Meanwhile, in another bowl mix the breadcrumbs with the curry, stir well and add the fish so that it covers well with bread crumbs (do not throw away the liquid from the marinade).
Grease a baking pan with a little olive oil and prepare the skewers, alternating the squid with shrimp and place in the pan. Pour the remaining liquid marinade in the breadcrumbs, stir well and cover the skewers so that they remain moist and not dry out during cooking. Put in the oven for about 20 minutes, until they are beautiful golden, then serve immediately warmed up.

The special thing about this dish is that the fish will be very crispy outside, but soft inside ..... a true goodness!

CROSTATA DI FARRO CON ZUCCHINE, FETA E RUCOLA FRESCA.... come portare in tavola la primavera!

Come portare a tavola la primavera???? Beh, provate questo piatto ed avrete la risposta.......  Poche calorie ma tanta freschezza e sapore!!!

INGREDIENTI PER 6 PERSONE
1 confezione di pasta sfoglia
350g zucchine
1 cipolla bianca
150g farro perlato
150g di feta greca
40g rucola fresca
15 g mandorle pelate
pangrattato q.b.
sale, pepe nero macinato fresco

Lessate il farro in acqua salata e quando sarà cotto scolatelo bene.
Nel frattempo fate saltare le zucchine tagliate a tocchetti, con la cipolla in poco olio; aggiungete il farro, regolate di sale, pepate e fate insaporire bene per qualche minuto. Quindi lasciate intiepidire.
Srotolate la pasta su una teglia tonda lasciandola nella sua carta da forno: passate il mattarello sui bordi in modo da togliere la pasta in eccesso che comunque servirà per la decorazione. Frullate ora la Feta con la rucola ed aggiungete le mandorle tritate grossolanamente e poi aggiungere il composto al farro. Amalgamate bene e disponete il tutto nella tortiera. Spolverizzate con un pò di pangrattato e decorate con i ritagli della pasta sfoglia in modo da formare una rete come nelle crostate dolci. Cuocete a forno già caldo a 200° per circa 30/35 minuti fino a quando la superficie non sarà ben dorata.
Lasciate intiepidire e servite.

Questo è un ottimo piatto unico da portare anche sul lavoro, al mare o in qualche pic-nic  con gli amici!!! Ed è leggero, fresco, facile da preparare e così originale che non potrete non provarlo!!!


TART SPELT, ZUCCHINI, FETA AND ROCKET SALAD ... bring to the table as the spring!

How to bring to the table the spring?? Well, try this dish and you will have the answer ....... Low in calories but a lot of freshness and flavor!

INGREDIENTS FOR 6 PEOPLE
1 pack of puff pastry
350g courgettes
1 white onion
150g pearl barley
150g Greek feta
40g fresh rocket
15 g blanched almonds
breadcrumbs q.b.
salt, freshly ground black pepper

Boil the farro in salted water and when it is cooked, drain well.
Meanwhile, saute zucchini cut into chunks, with the onion in a little oil, add the farro, salt, pepper and cook for some minutes. So let cool.
Roll out the dough on a round baking pan with parchment paper, leaving in its: pass the rolling pin on the edges so as to remove the excess dough that still serve for decoration. Whisk now Feta with rocket and add the coarsely chopped almonds and then add the mixture to the farro. Mix well and place everything into the pan. Sprinkle with a bit of bread crumbs and decorated with cut-outs of the puff pastry to form a network such as the sweet tarts. Bake in a preheated oven at 200 degrees for about 30/35 minutes until the surface is golden.
Let cool and serve.

This is a great dish to bring at work, at the beach or picnic with some friends! And it is light, fresh, easy to prepare and so original that you can not not try it!

CARCIOFI RIPIENI.....

E dopo i bagordi per il mio compleanno, torniamo con le ricette per il blog!!!!!!

Un secondo piatto facile e veloce.... si possono preparare anche in anticipo e cuocerli all'ultimo momento, per portare in tavola un piatto appetitoso, invitante che accontenta tutti quanti!!!

INGREDIENTI PER 4 PERSONE: 

4 carciofi
250 g di polpa di vitello tritata
30 g di funghi secchi
una cipolla bianca
uno spicchio di aglio
2 tuorli
olio extravergine d’oliva
un limone
6 cucchiai di grana padano grattugiato
un ciuffo di prezzemolo
brodo vegetale
sale, pepe nero macinato fresco

Mettete a bagno i funghi in acqua tiepida per 30 minuti, Private i carciofi di gambi, foglie esterne e punte. Tagliateli a metà, eliminate il fieno e metteteli a bagno in acqua acidulata con il succo del limone. Scolateli e cuoceteli a vapore per 10 minuti, Tritate la cipolla insieme all'aglio, fateli rosolare in poco olio, unite i funghi strizzati e tritati, salate, pepate e cuocete per 10 minuti (se i funghi si asciugano troppo, aggiungete poca acqua calda). Mescolate la carne con 4 cucchiai di grana, i tuorli, i funghi tiepidi, il prezzemolo tritato, sale e pepe. Distribuite il composto nei mezzi carciofi, sistemateli in una pirofila unta di olio e irrorate con poco olio. Versate 100 ml di brodo nella pirofila, copritela con un foglio di alluminio e mettetela in forno a 180° per 30 minuti (se serve, aggiungete altro brodo durante la cottura, facendo attenzione a non bagnare il ripieno, che altrimenti non può gratinare in modo uniforme).
Eliminate il foglio di alluminio, scoprite i carciofi, spolverizzateli con il grana rimasto, fateli cuocere ancora per 10 minuti fino a che non saranno belli dorati e serviteli subito, caldi.


ARTICHOKE STUFFED BAKED

A second pot easy and fast .... you can also prepare in advance and cook them at the last moment, to bring to the table a dish appetizing, inviting that pleases everyone!

INGREDIENTS FOR 4 PEOPLE:
4 artichokes
250 g lean minced veal
30 g of dried mushrooms
a white onion
a clove of garlic
2 egg yolks
extra virgin olive oil
a lemon
6 tablespoons grated parmesan cheese
a sprig of parsley
vegetable broth
salt, freshly ground black pepper

Soak the mushrooms in warm water for 30 minutes, Private stems of the artichokes, outer leaves and spikes. Cut them in half, remove the hay and put them to soak in water acidulated with lemon juice. Drain and steam cook for 10 minutes, chop the onion with the garlic, brown them in a little oil, add the mushrooms drained and chopped, salt and pepper and cook for 10 minutes (if the mushrooms too dry, add a little hot water ). Mix the meat with 4 tablespoons of parmesan, egg yolks, warm mushrooms, chopped parsley, salt and pepper. Spread the mixture in the media artichokes, arrange in a baking dish greased with olive oil and sprinkle with a little oil. Pour 100 ml of broth in the pan, cover with aluminum foil and place in oven at 180 degrees for 30 minutes (if necessary, add more broth during cooking, taking care not to wet the filling, which otherwise can not browning so uniform).
Eliminate the aluminum foil, discover artichokes, sprinkle with remaining Parmesan cheese, cook for another 10 minutes until they are golden brown and serve immediately beautiful, warm.

TORTA DI PATATE ALLA GRECA...... circa 250 calorie a persona e tanto, tanto sapore!


Leggerissimo ma veramente appetitoso, questa torta di patate a base di feta e yogurt greco: solo 250calorie a porzione per un sapore a tutto tondo da accompagnare con una ricca insalata  mista....


INGREDIENTI PER 4 PERSONE:
1 cucchiaino di semi di finocchio
150g feta
100g di yogurt greco
1 uovo
500g di patate medie
olio extravergine di oliva - sale - pepe nero

Preriscaldate il forno a 200°, quindi prendete una teglia di circa 22cm di diametro e ricopritela con un foglio di carta da forno bagnato e poi strizzato. Pestate i semi di finocchio in un mortaio ed in una terrina lavorate la feta con una forchetta, unite poi lo yogurt greco, i semi di finocchio pestati e l'uovo battuto: mescolate accuratamente e regolate di sale.
Pelate le patate e tagliatele a rondelle sottili e lasciatele qualche minuto sotto l'acqua corrente, quindi asciugatele bene e sistematele a foderare lo stampo in modo che non ci siano buchi. Spennellate con un pò d'olio extravergine, salate appena, spolverizzate di pepe nero macinato sul momento e versate metà composto di feta e yogurt; quindi coprite con uno strato di patate sottili, spennellate nuovamente di olio, e versate il resto del composto. Foderate con le patate restanti, spennellate di olio, salate e pepate: coprite con un foglio di alluminio ed infornate per circa 30 minuti. Trascorso questo tempo, togliete il foglio di alluminio e continuate la cottura per altri 15/20 minuti fino a che la superficie non sarà dorata e croccante.

Questo piatto normalmente si serve a tiepido, ma si può consumare tranquillamente anche a temperatura ambiente!!! Ed è ottimo anche al mare o come pranzo veloce in ufficio!!! 

POTATO  GREEK CAKE

INGREDIENTS FOR 4 PEOPLE:
1 teaspoon fennel seeds
150g feta
100g of greek yogurt
1 egg
500g medium potatoes

This dish is normally used to warm, but you can safely consume even at room temperature! And it is also great at the beach or as a quick lunch in the office!


SCALOPPINE DI VITELLO AI CARCIOFI.... sapore di stagione!

Un piatto fresco ed adatto alla stagione, appetitoso e leggero.........

INGREDIENTI PER 4 PERSONE:
4 belle fette di fesa di vitello
1 bicchiere di vino bianco secco
prezzemolo - aglio
brodo di carne
olio extravergine di oliva
3 carciofi
farina bianca
1 limone
sale e pepe nero macinato fresco

Pulite i carciofi ed eliminate le foglie esterne, così come la parte più dura dei gambi; tagliate via la punta, divideteli a  metà e poi a fettine (dopo aver tolto la peluria interna) che metterete in una ciotola di acqua ben fredda acidulata con il succo di mezzo limone più le bucce: lasciate a riposo in questa soluzione acida per non meno di 30 minuti. Tagliate ora leggermente i bordi della carne, facendo delle piccole incisioni verticali, quindi appiattitele con un batticarne (per evitare che la carne si rovini, consiglio di metterla fra 2 fogli di carta da forno) e quindi infarinatela. Disponete sul fuoco una larga padella antiaderente con un bel filo d'olio: aggiungete lo spicchio di aglio schiacciato e quando l'olio sarà riscaldato (ma non bollente mi raccomando) fate dorare le fette di vitello da entrambe le parti fino a doratura. Sfumate ora con del vino bianco, abbassate la fiamma ed aggiungete i carciofi bel sgocciolati ed un pochino di brodo (circa 1/2 mestolo) continuando la cottura per circa 8/9 minuti. Salate, pepate e irrorate con il succo del limone rimasto; fate consumare a fiamma più vivace, poi spegnete il fuoco e cospargete con prezzemolo tritato. Portate a tavola ben caldo.

VEAL MEDALLIONS WITH ARTICHOKE

A fresh dish and suitable for the season, appetizing and light .........

INGREDIENTS FOR 4 PEOPLE:
4 beautiful slices of breast of veal
1 glass of dry white wine
parsley - garlic
meat broth
extra virgin olive oil
3 artichokes
white flour
1 lemon
salt and freshly ground black pepper

Clean the artichokes and remove the outer leaves, as well as the hardest part of the stems, cut off the tip, cut them in half and then into slices (after removing the fluff inside) that you will put in a bowl of very cold water acidulated with juice of half a lemon over the skins: left fallow in this acid solution for at least 30 minutes. Now slightly cut the edges of the meat, making small cuts vertical, then flatten them with a meat tenderizer (to prevent the meat is spoiled, I suggest you put it between 2 sheets of baking paper) and then flour it. Arrange Heat a large frying pan with a good drizzle of olive oil: add the crushed garlic and when the oil is heated (but not hot I recommend) then brown the veal slices on both sides until golden brown. Pour now with the white wine, reduce the heat and add the drained artichokes nice and a little bit of broth (about half spoon) continue cooking for about 8/9 minutes. Add salt and pepper and sprinkle with the remaining lemon juice, do consume more lively flame, then turn off the heat and sprinkle with chopped parsley. Bring to the table piping hot.

INVOLTINI DI ACCIUGHE CON RIPIENO DI RICOTTA.... leggerezza e delicato sapore!

 Antipasto o appetitoso secondo piatto??? O magari come fingerfood per un'aperitivo con gli amici..... beh: come utilizzare questi simpatici involtini di acciughe, decidetelo voi!!! Io vi dico solo che sono leggeri, dal sapore delicato e con poche calorie.....


Vi do qui la dose da antipasto.... ma potete modificare le quantità se li volete servire come secondo piatto.


INGREDIENTI PER 4 PERSONE:
600g acciughe fresche
100g ricotta
40g mollica di pane 
2 cucchiai di parmigiano grattugiato
1 cucchiaio di pinoli
prezzemolo - maggiorana
1 spicchio di aglio
1 uovo
olio extravergine - sale - pepe nero

Pulite il pesce avendo cura di non rompere i filetti staccandoli a metà, passateli sotto l'acqua fredda e disponeteli ad asciugare su uno strofinaccio da cucina pulito con la polpa rivolta verso l'alto.
Sbattete l'uovo in una ciotola con un pizzico di sale e quando sarà ben montato unite il pane grattato lasciando a riposo per circa una decina di minuti. Nel frattempo tritate il prezzemolo e la maggiorana (lasciatene qualche rametto per la decorazione) insieme allo spicchio di aglio e ai pinoli: aggiungete questo trito al pane; mescolate e incorporate anche la ricotta e il parmigiano. Regolate di sale e spolverate di pepe.
Foderate una pirofila con della carta da forno bagnata e disponetevi sopra gli involtini di acciuga così composti: disponete circa un cucchiaino di composto su ogni filetto, arrotolate e fissate con uno stecchino di legno. Quando tutte le acciughe avranno preso posto nella pirofila, irrorate con poco olio e infornate a forno preriscaldato a 190° per circa 10 minuti (ricordate di non cuocerle troppo perchè le acciughe diventano poi stoppose). 
Disporre in un vassoio da portata e decorare con rametti di maggiorata e fettine di limone a piacere!
Anche per questo piatto mi piace  un vino bianco con tante bollicine..... ed è per questo motivo che spesso preparo questi involtini come finger-food da aperitivo! Consiglio "Stregato dalla Luna" che a noi piace veramente moltissimo!

ANCHOVY ROLLS IN THE OVEN 

 Appetizing appetizer or main course?? Or maybe as a finger food for a drink with friends ..... Well: How to use these cute stuffed anchovies, decidetelo you! I will only say that they are light, delicate flavor and low in calories ..... I give you here the dose appetizer .... but you can change the quantity if you want them to serve as a main dish.
INGREDIENTS FOR 4 PEOPLE:
600g fresh anchovies
100g ricotta cheese
40g breadcrumbs
2 tablespoons grated Parmesan cheese
1 tablespoon pine nuts
parsley - marjoram
1 clove of garlic
1 egg
olive oil - salt - black pepper
Clean the fish, taking care not to break the threads snapping in half, pass them under cold water and place to dry on a clean kitchen towel with the flesh side up.
Beat the egg in a bowl with a pinch of salt and when it is mounted together with the breadcrumbs left to rest for about ten minutes. Meanwhile, chop the parsley and marjoram (lasciatene few sprigs for decoration) along with the clove of garlic and pine nuts: Add this mixture to the bread, mix well and stir in the ricotta and Parmesan. Season with salt and sprinkle with pepper.
Line a baking dish with baking paper wet and arrange the plums anchovy as follows: You have about a teaspoon of mixture on each fillet, roll up and secure with a toothpick. When all the anchovies have taken place in the pan, drizzle with a little olive oil and bake in preheated oven at 190 degrees for about 10 minutes (remember not to overcook because the anchovies then become stringy).
Place in a serving dish and garnish with sprigs and lemon slices increased at will!

For this dish I like a white wine with lots of bubbles ..... and it is for this reason that often prepare these rolls as finger-food as an aperitif! Council "Bewitched by the Moon" that we really like it!

ORATA IN CROSTA MORBIDA CON POMODORINI, ZUCCHINE E PATATE.....

Un piatto da leccarsi i baffi..... l'ho servito con le bruschette di pane con l'olio buono e le erbette della lunigiana...... un successo strepitoso!!!

INGREDIENTI PER 2 PERSONE:

2 orate grandi
2 patate medie
2 zucchine
olio extravergine di oliva
prezzemolo
20 pomodorini cicliegini
40g di pecorino grattugiato
100g di pan grattato
sale e pepe nero da macinare fresco

Rivestite una teglia capiente con della carta da forno bagnata e ungetela poco con un filo d'olio; adagiatevi sopra le fettine di zucchina tagliate per lungo, le rondelle di patate un pò sovrapposte tagliate piuttosto fini. Spolverate di sale e di pepe macinato fresco e di un pochino di prezzemolo tritato. Sfilettate le orate dopo averle squamate con attenzione (se vi sembra una cosa troppo difficile, chiedete al vostro pescivendolo di farlo per voi), e mettetele sul letto di patate e zucchine. Miscelate ora il pangrattato con il pecorino ed aggiungete il resto del prezzemolo tritato ed un pizzico di sale e cospargete i filetti di orata con questo composto, per poi completare con i pomodorini tagliati a metà che avrete la cura di distribuire uniformemente. Un'aggiustata di sale e pepe, un filo d'olio ed infornate a forno preriscaldato a 200° per circa 30 minuti (controllate sempre perchè ogni forno ha tempi differenti) e poi gli ultimi 5 minuti con la modalità grill per fare la crosticina dorata. Servite subito accompagnando da un buon bianco frizzante: io uso Stregato dalla Luna che è il mio preferito!!!!!!!

BREAM BAKED WITH TOMATOES ZUCCHINI AND POTATOES

A dish mouth-watering ..... I served with toasted bread with good olive oil and herbs of Lunigiana ...... a resounding success!

INGREDIENTS FOR 2 PEOPLE:

2 large bream
2 medium potatoes
2 zucchini
extra virgin olive oil
parsley
20 cherry tomatoes cicliegini
40g of grated pecorino cheese
100g of breadcrumbs
salt and black pepper to grind fresh

Line a large baking sheet with baking paper and grease it slightly wet with a little olive oil; Lie down on the slices of zucchini cut lengthwise, the potatoes slices overlapping a little cut rather fine. Sprinkle with salt and freshly ground pepper and a little chopped parsley. Filleted sea bream after being scaled carefully (if you find it's too difficult, ask your fishmonger to do it for you), and put them on the bed of potatoes and zucchini. Now Mix the breadcrumbs with the cheese and add the remaining chopped parsley and a pinch of salt and sprinkle the fillets of sea bream with this compound, and then complete with halved cherry tomatoes that you care to evenly distribute. Un'aggiustata salt and pepper, a little olive oil and bake in preheated oven at 200 degrees for about 30 minutes (always check because every oven has different times) and then the last 5 minutes with the grill mode to make the golden crust . Serve immediately accompanied by a good sparkling white: I use Bewitched by the Moon which is my favorite!!!

LE POLPETTE TONIFICANTI ALLE MELANZANE, FETA E SESAMO.... continuano le ricette light per depurarsi!


Non sempre le polpette sono amiche della linea, anche perchè nascono come "rimedio economico per riciclare gli avanzi del giorno prima"! Ma in questo caso le cose sono differenti: queste polpette non solo sono amiche della linea, ma anche del palato... senza dimenticare le proprietà altamente depurative (vi ricordo che sono composte per oltre il 90% di acqua e ricchissime di minerali e preziose vitamine)... Quindi tutti a dieta con queste polpette fantastiche:

INGREDIENTI PER 4 PERSONE: 
 3 melanzane 
2 uova 
100 g di feta tagliata a cubetti 
100 g di mollica di pane 
un bicchiere di latte 
 50 g di farina bianca 
50 g di parmigiano o pecorino grattugiato 
2 cucchiai di sesamo 
uno spicchio d'aglio tritato 
basilico e menta tritati 
sale e pepe
Cuocere le melanzane: si possono tenere intere in forno e poi spelarle, oppure stufarle in padella già sbucciate e tagliate in quarti. Schiacciarle con la forchetta in una terrina e unirvi un uovo, la mollica di pane precedentemente ammollata nel latte, il parmigiano grattugiato e aglio, basilico e menta tritati. Aggiustare di sale e pepe e amalgamare bene il tutto. Formare delle palline con l'impasto e inserire al centro di ognuna un cubetto di feta. Passare le polpette prima nell'ultimo uovo sbattuto, poi nei semi di sesamo e infine velocemente nella farina bianca. Disporre le polpette  su una placca da forno e infornarle a 180° C per un quarto d'ora circa o comunque finché la superficie non sia croccante.
Si servono tiepide ma sono buonissime anche fredde... io le accompagno con una insalata mista condita con una citronette al pompelmo.... 
PURIFYING MEATBALLS WITH EGGPLANT, FETA AND SESAME

INGREDIENTS FOR 4 PEOPLE:
  3 eggplants
2 eggs
100 g feta cheese, cut into cubes
100 g of bread crumbs
a glass of milk
  50 g of white flour
50 g of grated parmesan or pecorino cheese
2 tablespoons of sesame
a clove of minced garlic
chopped basil and mint
salt and pepper
Cook the eggplant: you can keep them whole in the oven and then spelarle, or stufarle in the pan already peeled and cut into quarters. Mash with a fork in a mixing bowl and add an egg, bread crumbs previously soaked in milk, Parmesan cheese and garlic, chopped basil and mint. Season with salt and pepper and mix well. Form small balls with the dough and place in the center of each a cube of feta. Pass the meatballs before the last beaten egg, then in sesame seeds and then quickly into white flour. Arrange the meatballs on a baking sheet and bake at 180 ° C for a quarter of an hour or until the surface is crisp.
They are served warm but are also delicious cold ... the I accompany with a mixed salad topped with a citronette grapefruit

TORTINO DI FINOCCHI AL FORNO... per mangiare bene e con poche calorie!

Si serve tiepido oppure freddo ed è ancora più buono se preparato il giorno prima: per questo è una ricetta interessante da consumare al lavoro o in campagna durante una merenda. Il suo sapore è molto delicato ma gustoso ed è indicato per chi segue una dieta ipocalorica senza voler rinunciare al gusto.

INGREDIENTI PER 2 PERSONE:

600 g finocchi puliti e lavati
2 uova
4 cucchiai di parmigiano grattato
2 cucchiai di olio extravergine di oliva
sale e pepe

Tagliate i finocchi a fette poco spesse e fateli cuocere a vapore fino a che non saranno morbidi. Fateli raffreddare ed intanto rompete le uova in una terrina, salate e pepate ed aggiungete il parmigiano grattugiato. Foderate con la carta da forno una teglia (io bagno sempre la carta in modo che aderisca meglio)e sistemate i finocchi cotti; versate sopra il composto a base di uova e irrorate con l'olio extravergine. Infornate a forno caldo a 180° per un 30 minuti circa, fino cioè a quando non si sarà formata una crosticina dorata sulla superficie (controllate sempre perchè ogni forno di casa ha le sue temperature e i suoi tempi). Lasciate intiepidire prima di portate in tavola e poi trasferite su un piatto da portata eliminando la carta da forno. 


PIE FENNEL LIGHT

Serve warm or cold and is even better if prepared the day before: this is an interesting recipe to use at work or in the countryside during a snack. Its flavor is very mild but tasty and is suitable for those who follow a low calorie diet without giving up taste.

INGREDIENTS FOR 2 PEOPLE:

600 g fennel cleaned and washed
2 eggs
4 tablespoons of grated Parmesan cheese
2 tablespoons extra virgin olive oil
salt and pepper

Cut the fennel into slices slightly thicker and let them steam until they are soft. Meanwhile, let cool and break the eggs into a bowl, add salt and pepper and add the grated Parmesan cheese. Lined with baking paper a baking dish (I always shower the paper so that it fits better) and place the fennel cooked, pour over the mixture of egg and sprinkle with olive oil. Bake in preheated oven at 180 ° for about 30 minutes, until that is, when it will have formed a golden crust on the surface (always check because every house has its own oven temperatures and times). Let cool before brought to the table and then transferred to a dish removing the baking paper.
