THE OCTOPUS PALERMITANA OF MY FRIEND TERMS OF GRAZIELLA IMERESE
From Sicily, my friend Graziella P. Termini Imerese sends me this spectacular octopus salad with seafood and fresh vegetables! Obviously it's a summer dish, but I propose as an appetizer for a dinner with friends ... I'm sure to make a great impression!
INGREDIENTS FOR 4 PEOPLE:
1 octopus of about 1 kg
2 carrots
2 stalks of celery
1 white onion
3 sticks of surimi crab flavored
300g between mussels and clams
oil, salt, pepper
the juice of one lemon
Boil the octopus in cold salted water for about forty minutes from the water took a boil. In the meantime, please open the mussels and clams in a pan with a lid and a little oil: peel and let them cool aside. Wash the vegetables and cut them into pieces and place in a large bowl. Also cut the sticks of surimi and add them to the vegetables along with seafood at room temperature. When the octopus is well cooked, drain and cut into pieces, once cooled, add it to the salad vegetables and season with salt, pepper to taste, sprinkle with the lemon juice and a generous drizzle of extra virgin olive oil!
In the summer it is best to rest for half an hour in the fridge before serving this wonderful octopus salad can be an inviting and fresh dish, while in winter it can become an original appetizer to serve with a nice wine fresh and bubbly!

topping all'aceto balsamico

PRAWNS with lard OF COLONNATA ON CREAM OF CECI GARFAGNANA
After the efforts electoral returns to cook ..... Here's an easy dish, tasty but very effective! The chickpea Garfagnana has the advantage that it can be prepared the day before and to be stored in the refrigerator until ready to serve .... not bad I would say, given the short time that we often have to cook!
INGREDIENTS FOR 4 PEOPLE:
4 beautiful fresh prawns
200g chickpeas Garfagnana
1 shallot
4 sage leaves and a sprig of rosemary
4 slices of lard rather long
salt, pepper, extra virgin olive oil in Lunigiana
topping with balsamic vinegar
4 sprigs of parsley for garnish
Wilt thinly sliced shallots in olive oil over a low heat. When it became soft and transparent, pour a little wine Vermentino, add the rosemary and sage leaves and chickpeas Garfagnana previously soaked in water and then boiled in salted water. Do well browned and cook for about ten minutes, then pass through a sieve, season with salt and pepper to taste (if the cream proves a little thick you can add warm water or vegetable broth). Keep chickpea warm. Meanwhile, shell the prawns, removing only the central part of the carapace, leaving head and tail; remove the black wire and wrap the middle with lard. Then arrange them in a baking sheet lined with parchment paper and bake in a preheated oven at 220 ° until golden brown (cooking time depends strongly on the oven, however, keep a close eye on the shrimp so that from cooking too).
Pour the cream of chickpeas, dividing it into 4 plates, and recline on a prawn hot straight from the oven, you have "scratched" by topping with balsamic vinegar. Sprinkle with pepper, garnish with a sprig of parsley and serve immediately.
Serve this attractive appetizer, accompanied with a glass of Vermentino dei Colli di Luni nice and cool: the success is guaranteed!

Servite subito bello caldo.
THE SAFFRON CREPES with red radicchio WITH MUSHROOMS AND BASIL SAUCE GORGONZOLA OF MY FRIEND PAOLA REPICCIOLI
My friend Paola Repiccioli, in addition to being a great painter (and do not say because it's my friend, but because it is really good), he's doing very well in the kitchen ... as in his paintings play with colors and flavors always giving spectacular dishes. Do not believe me? Here is the proof!
INGREDIENTS FOR 4 PEOPLE:
1/4 white onion
1 tablespoon red wine
1 radicchio
20g of dried mushrooms
100g plain flour
50g Gorgonzola
the tip of a spoon of saffron powder
oil, salt, pepper and a knob of butter 30g +
Finely chop the onion and fry slowly in a little butter, add a generous handful of radicchio cut into thin strips and let dry well. Add a tablespoon of red wine, salt and stir in a tablespoon of sugar to counteract the slightly bitter radicchio. Chop the dried mushrooms previously soaked in water and add to the radicchio along with 3 tablespoons of water mushrooms themselves, do consume a slow fire. Meanwhile, prepare a sauce with 2 tablespoons of flour, 30g butter, salt and pepper, a glass of warm milk trying not to make too thicken the sauce, then add a 50g blue cheese (if you like you can decide to increase the dose if like flavors decided). Now prepare the crepes lunigianesi: Take the flour and water to soak the mushrooms, which have filtered, saffron, a pinch of salt and stir well until the mixture is the consistency much like glue: Towards a ladle of this prepared in a frying pan lightly oiled, to form the "pancakes", and after a few minutes, turn and finish cooking. At this point, placed the "crepes Lunigiana" in a pan greased with olive oil, after being filled with the mixture of radicchio and mushrooms, cover with the sauce flavored with blue cheese and sprinkle with a handful of grated Parmesan cheese. Bake in preheated oven at 200 degrees for about 15 minutes until it has formed a nice crust.
Serve at once beautiful warm.

ALBERGO - RISTORANTE MIRAMONTI a Comano

The hotel Miramonti has an ancient history. Located 600 meters above sea level in one of the most charming places of Lunigiana, has its origins in Ancient Locanda "Ca 'del Gallo," a station "e" on the road Lagastrello, founded in 1913 by the grandparents of the current owners, Laura and Umberto Ferrari.
