500g di lasagne all'uovo
500g besciamella

300 g gamberi freschi (o congelati)
1 limone intero (possibilmente biologico)
1/2 bicchiere di vino bianco secco
prezzemolo fresco

INGREDIENTI:
1 petto di pollo intero
2 pomodori maturi (o una manciata di pomodorini)
2 carote fresche
una manciata di olive nere denocciolate
cipolline sott'aceto
capperi sott'aceto o in salamoia
1 insalata belga
Sale e maionese
(Prezzo a bottiglia: 6.50euro)

250 ml d’acqua
70 gr di burro
150 gr di farina
Scorza grattugiata di 1 limone
Sale
3 uova medie
40 gr di zucchero
INGREDIENTI PER LA CREMA
30 gr di farina
250 ml di latte fresco
Scorza di ½ limone
3 tuorli d’uovo
1 bustina di vanillina
60 gr di zucchero
Ciliegie candite (o amarene sciroppate), 1 per zeppola
Zucchero a velo
PREPARAZIONE
The tradition of donuts seems to date back to Ancient Rome, such as cake in honor of the god of wine and wheat: wheat pancakes were prepared that today we have improved in becoming extraordinary Zeppole di San Giuseppe!
INGREDIENTS FOR ABOUT 15 donuts
250 ml of water
70 grams of butter
150 grams of flour
Grated zest of 1 lemon
Salt
3 medium eggs
40 grams of sugar
INGREDIENTS FOR THE CREAM
30 grams of flour
250 ml of fresh milk
Zest of ½ lemon
3 egg yolks
1 teaspoon of vanilla
60 grams of sugar
Cherries (or cherries in syrup), 1 for zeppole
Icing sugar
PREPARATION
Initially prepare the custard. Once this is done to prepare the dough for donuts going to pour water into a saucepan, add the pieces of butter and salt, and set it on fire. As soon as the water will boil and the butter is completely melted, remove from heat the pan and add the flour and mix well with a wooden spoon so as to mix everything and get a compact structure.
At this point, put the saucepan over a gentle fire and turn until it will form a white coating on the bottom. The moment will form off the stove, add sugar and mix well. Once this is done pour the mixture into a bowl and allow to cool. Once cooled, add and mix the lemon zest, the eggs one at a time by entering the next only when the previous one is completely absorbed.
Once the dough is ready cut squares of parchment paper sized 8 cm x 8 cm, put the dough in a pastry bag with a star nozzle and do on every square, with a spiral motion, a disc of paste of about 5 cm in diameter. Superimposing, on the outer edge of each disk, a ring of dough in a manner that does form a bowl.
At this point we are ready for cooking. Take a pan with high sides, place the oil for frying (preferably peanut) and take an average temperature of 170 ° C. Take it at this temperature is critical because it will be hot and we could not turn the donuts several times making them swell. The donuts are ready when they have a golden color. Once removed from the oil, to drain excess oil and absorb with absorbent paper. Once all the donuts fried, put in a pastry bag to the center of the custard donut. Add amarana or cherry and sprinkle icing sugar.
