IL POLPO ALLA PALERMITANA DELLA MIA AMICA GRAZIELLA DI TERMINI IMERESE

Dalla Sicilia, la mia amica Graziella P. di Termini Imerese mi manda questa spettacolare insalata di polipo con i frutti di mare e le verdure fresche! Ovviamente è un piatto più estivo, ma io lo proporrò come antipasto per una cena  fra amici... sono sicura di fare un figurone!!!

INGREDIENTI PER 4 PERSONE:

1 polpo da circa 1 kg
2 carote
2 coste di sedano
1 cipolla bianca
3 bastoncini di surimi aromatizzati al granchio
300g fra cozze e vongole
olio, sale, pepe
il succo di un limone

Fate lessare il polpo in acqua fredda salata, per una quarantina di minuti da che l'acqua ha preso il bollore. Nel frattempo fate aprire le cozze e le vongole in una padella con il coperchio e poco olio: sgusciatele e fatele raffreddare da parte. Lavate le verdure e tagliatele a pezzi e disponetele in una ciotola capiente. Tagliate anche i bastoncini di surimi ed aggiungeteli alle verdure insieme ai frutti di mare a temperatura ambiente. Quando il polpo sarà ben cotto, scolatelo e tagliatelo a pezzi: una volta raffreddato aggiungetelo all'insalata di verdure e regolate di sale; pepate a piacere, irrorate con il succo di limone e con un generoso filo di olio extravergine di oliva!

In estate è preferibile far riposare una mezz'oretta in frigo prima di servire e questa meravigliosa insalata di polpo può essere un invitante e fresco piatto unico, mentre in inverno può diventare un originale antipasto da proporre con un bel vino fresco e frizzante!!!

THE OCTOPUS PALERMITANA OF MY FRIEND TERMS OF GRAZIELLA IMERESE


From Sicily, my friend Graziella P. Termini Imerese sends me this spectacular octopus salad with seafood and fresh vegetables! Obviously it's a summer dish, but I propose as an appetizer for a dinner with friends ... I'm sure to make a great impression!

INGREDIENTS FOR 4 PEOPLE:

1 octopus of about 1 kg
2 carrots
2 stalks of celery
1 white onion
3 sticks of surimi crab flavored
300g between mussels and clams
oil, salt, pepper
the juice of one lemon

Boil the octopus in cold salted water for about forty minutes from the water took a boil. In the meantime, please open the mussels and clams in a pan with a lid and a little oil: peel and let them cool aside. Wash the vegetables and cut them into pieces and place in a large bowl. Also cut the sticks of surimi and add them to the vegetables along with seafood at room temperature. When the octopus is well cooked, drain and cut into pieces, once cooled, add it to the salad vegetables and season with salt, pepper to taste, sprinkle with the lemon juice and a generous drizzle of extra virgin olive oil!

In the summer it is best to rest for half an hour in the fridge before serving this wonderful octopus salad can be an inviting and fresh dish, while in winter it can become an original appetizer to serve with a nice wine fresh and bubbly!


GAMBERONI AL LARDO DI COLONNATA SU CREMA DI CECI DELLA GARFAGNANA

Dopo le fatiche elettorali si torna a cucinare..... Eccovi un piatto facilissimo, appetitoso ma di grande effetto! La crema di ceci della Garfagnana ha il vantaggio di poter essere preparata anche il giorno prima e di essere conservata in frigorifero fino al momento di servire.... non male direi, visto il poco tempo che spesso abbiamo per cucinare!

INGREDIENTI PER 4 PERSONE:

4 gamberoni belli freschi
200g di ceci della Garfagnana
1 scalogno
4 foglie di salvia e un rametto di rosmarino
1/2 bicchiere di vino bianco Vermentino dei Colli di Luni
4 fette di lardo di Colonnata piuttosto lunghe
sale, pepe, olio extravergine di oliva della Lunigiana
topping all'aceto balsamico
4 ciuffetti di prezzemolo per guarnire

Fate appassire lo scalogno tagliato sottile in olio extravergine, a fiamma bassa. Quando sarà diventato morbido e trasparente, sfumate con poco vino Vermentino; aggiungete il rosmarino e le foglie di salvia e i ceci della Garfagnana precedentemente ammollati e poi lessati in acqua salata. Fate ben rosolare ed insaporire per una decina di minuti, quindi passate al setaccio, regolate di sale e pepate a piacere (se la crema risultasse un pò densa potete aggiungere acqua tiepida o brodo vegetale). Tenete la crema di ceci in caldo. Nel frattempo sgusciate i gamberoni, togliendo solo la parte centrale del carapace, lasciando testa e coda; togliete il filo nero e avvolgete la parte centrale con il lardo di Colonnata. Sistemateli quindi in una teglia rivestita di carta da forno e cuocete in forno preriscaldato a 220° fino a doratura (la durata della cottura dipende molto dal forno, comunque tenete sempre d'occhio i gamberoni in modo che non cuociano troppo).
Versate la crema di ceci dividendola in 4 piatti, ed adagiatevi sopra un gamberone caldissimo appena uscito dal forno, che avrete "rigato" di topping all'aceto balsamico. Spolverate con poco pepe, guarnite con un ciuffetto di prezzemolo e servite immediatamente.

Servite questo invitante antipasto, accompagnando con un bicchiere di Vermentino dei Colli di Luni bello fresco: il successo è garantito!!!

PRAWNS with lard OF COLONNATA ON CREAM OF CECI GARFAGNANA

INGREDIENTS FOR 4 PEOPLE:

4 beautiful fresh prawns
200g chickpeas Garfagnana
1 shallot
4 sage leaves and a sprig of rosemary
1/2 cup white wine Vermentino dei Colli di Luni
4 slices of lard rather long
salt, pepper, extra virgin olive oil in Lunigiana
topping with balsamic vinegar
4 sprigs of parsley for garnish

Wilt thinly sliced ​​shallots in olive oil over a low heat. LE CREPES ALLO ZAFFERANO CON RADICCHIO TREVIGIANO, FUNGHI E BESCIAMELLA AL PROFUMO DI GORGONZOLA DELLA MIA AMICA PAOLA REPICCIOLI

La mia amica Paola Repiccioli, oltre ad essere una grande pittrice (e non lo dico perchè è amica mia, ma perchè è veramente brava), se la cava ottimamente in cucina... come nei suoi quadri gioca con colori e sapori regalando sempre piatti spettacolari. Non mi credete? Eccone la prova!

INGREDIENTI PER 4 PERSONE:
1/4 di cipolla bianca
1 cucchiaio di vino rosso
1 radicchio trevigiano
20g di funghi secchi
100g di farina bianca
50g di Gorgonzola
la punta di un cucchiaio di zafferano in polvere
olio sale pepe e  una noce di burro + 30g
una manciata di parmigiano grattugiato

Tritare finemente la cipolla e farla rosolare molto lentamente in una noce di burro, aggiungere una ricca manciata di radicchio trevigiano tagliato a listarelle sottili e lasciare appassire bene. Aggiungere un cucchiaio di vino rosso, salare ed incorporare anche un cucchiaio di zucchero per contrastare leggermente l'amaro del radicchio. Tagliuzzare i funghi secchi precedentemente ammollati ed aggiungerli al radicchio insieme a 3 cucchiai dell'acqua dei funghi stessi; fare consumare a fiamma lenta. Nel frattempo preparare una besciamella con 2 cucchiai di farina, 30g di burro, sale e pepe, un bicchiere di latte tiepido cercando di non fare addensare troppo la salsa, quindi aggiungo un 50g di gorgonzola (a piacere si può decidere di aumentare la dose se piacciono i sapori più decisi). Ora preparate le crepes lunigianesi: prendete la farina e l'acqua di ammollo dei funghi, che avrete filtrato, lo zafferano, un pizzico di sale e mescolate bene fino ad ottenere un composto dalla consistenza molto simile alla colla vinilica: verso un mestolo di questo preparato in una padella antiaderente leggermente unta di olio, a formare la "crepes"; dopo alcuni minuti girate e finite la cottura. A questo punto sistemate le "crepes della lunigiana" in una teglia unta di olio extravergine, dopo averle riempite con il composto di radicchio e funghi; ricoprite il tutto con la besciamella aromatizzata al gorgonzola e spolverate con una manciata di parmigiano grattugiato. Infornate a forno preriscaldato a 200° per circa 15 minuti fino a che non si è formata una bella crosticina.
Servite subito bello caldo.

THE SAFFRON CREPES with red radicchio WITH MUSHROOMS AND BASIL SAUCE GORGONZOLA OF MY FRIEND PAOLA REPICCIOLI

INGREDIENTS FOR 4 PEOPLE:
1/4 white onion
1 tablespoon red wine
1 radicchio
20g of dried mushrooms
100g plain flour
50g Gorgonzola

Finely chop the onion and fry slowly in a little butter, add a generous handful of radicchio cut into thin strips and let dry well. Chop the dried mushrooms previously soaked in water and add to the radicchio along with 3 tablespoons of water mushrooms themselves, do consume a slow fire. Meanwhile, prepare a sauce with 2 tablespoons of flour, 30g butter, salt and pepper, a glass of warm milk trying not to make too thicken the sauce, then add a 50g blue cheese (if you like you can decide to increase the dose if like flavors decided). Now prepare the crepes lunigianesi: Take the flour and water to soak the mushrooms, which have filtered, saffron, a pinch of salt and stir well until the mixture is the consistency much like glue: Towards a ladle of this prepared in a frying pan lightly oiled, to form the "pancakes", and after a few minutes, turn and finish cooking. LA LUNIGIANA A VEREZZI IN PROVINCIA DI SAVONA

QUICHE CON CAPREGGIO E PROSCIUTTO COTTO

Questa squisita torta salata deriva dalla tradizione francese, conosciuta ovunque per la sua semplice realizzazione tradizionalmente a base di uova, pancetta e formaggio. In Lunigiana ne abbiamo creata una versione tutta nostrana, dove al posto della panna o formaggio francese, mettiamo il Capreggio... squisito formaggio tipo taleggio ma realizzato in azienda BIO con esclusivo latte di capra. Un sapore davvero unico, appetitoso e decisamente più leggero.....

INGREDIENTI PER 4 PERSONE: 
250g di Capreggio
200g di prosciutto cotto in una sola fetta
3 uova
1 confezione di pasta brisèe (ma se non la trovate provate anche la pasta sfoglia)
Erbette della Lunigiana

Foderate con la pasta brisèe una tortiera... io ho scelto una dal diametro di 26cm. Bucherellare un pochino il fondo con una forchetta e fare riposare in frigorifero per un 30 minuti circa. Nel frattempo tagliate striscioline il prosciutto cotto, e tritate con la mezzaluna il Capreggio; in una ciotola sbattete energicamente le uova con un pizzico abbondante di erbette della Lunigiana, poi aggiungete il formaggio e il prosciutto a striscioline. Versate il composto sulla pasta brisèe e livellate bene con un cucchiaio tutti gli ingredienti. Infornate a forno preriscaldato a 190° per circa 30 minuti..... Si può servire tiepida oppure a temperatura ambiente.

A volte aggiungo al ripieno anche una cipolla tagliata sottilissima e fatta leggermente appassire... strabuona!!!

ALBERGO - RISTORANTE MIRAMONTI a Comano



 L'albergo Miramonti ha una storia antica. Situato a 600 metri di quota in uno dei luoghi più suggestivi della Lunigiana, trae le sue origini dall'Antica Locanda «Ca' del Gallo», una stazione "di posta" sulla strada del Lagastrello, fondata nel 1913 dai Nonni degli attuali proprietari, Laura ed Umberto Ferrari. Ristrutturato nel corso degli anni, il Miramonti è ora dotato di tutti i requisiti che rendono un Hotel confortevole e funzionale. L'ultimo diletto è la piscina, appena realizzata, dalla quale si può ammirare un panorama mozzafiato.

E' oggi dotato di dodici camere, ristrutturate di recente, tutte con televisione, cassaforte, bagno e doccia. Alcune sono dotate di letto matrimoniale, altre di due letti singoli, mentre la più grande è dotata di ben quattro posti letto. Il panorama delle montagne che si scorge dalle finestre delle camere forma una vista quanto mai pittoresca e suggestiva.


Circondato dalle cime degli Appennini, tra boschi di castagni e di abeti, l'hotel Miramonti si trova a Comano, nell'alta valle del torrente Taverone, a 600 mt. di altezza. A poche centinaia di metri dall'albergo vi sono impianti sportivi di prim'ordine, come campi da tennis, da calcio e maneggio con scuola di equitazione. L'hotel Miramonti è la base ideale per escursioni verso il Lagastrello, le Alpi Apuane, la Lunigiana, ma anche le Cinque Terre e le le città d'arte toscane come Pisa e Lucca che distano meno di un'ora dall'hotel ...



Lo Chef è Umberto Ferrari, vero professionista dell'alta Cucina ed inoltre Sommelier professionista A.I.S., formatosi alla scuola dei migliori ristoranti Italiani ed internazionali come il «Rigoletto» di Reggiolo (RE), il «Maria Luigia» di Collecchio (PR), il «San Domenico» di New York (U.S.A.). La sua cucina dona al Miramonti qualcosa in più: pranzare qui è come mangiare in famiglia, assaporando però i gusti più raffinati. I suoi piatti sono un misto di cucina internazionale nei quali ha innestato i sapori tipici della Lunigiana; il tutto, ovviamente, abbinato ai migliori vini della rifornitissima cantina



La piscina è stata inaugurata nel mese di giugno del 2004 ed è riservata esclusivamente agli ospiti dell'albergo. 
Lunga 12 metri e larga 6, è stata costruita in un punto dal quale si ammira una delle viste più suggestive del territorio: immersi nel tepore dell'acqua lo scenario delle montagne tutt'intorno sembra quasi irreale.

I BISCOTTI DI SAN VALENTINO AL GRANO SARACENO...


In arrivo San Valentino ed insieme al regalino mi piace regalare anche qualche biscotto un pò particolare e buono... La mia nonna mi diceva sempre che gli uomini si prendono per la gola, e le regole delle nonne sono le più vere! Quindi ai fornelli...
Ingredienti( per circa 30 biscotti)
180 gr di farina di grano saraceno
100 gr di farina 00
125 gr di burro
60 gr di zucchero di canna
65 gr di zucchero bianco
1 uovo
scorza grattuggiata di arancia
1 pizzico di sale
zucchero di canna per la superficie
per la farcitura
confettura di frutti di bosco biologica
zucchero a velo
Preparazione
Lavorate  il burro morbido insieme ai due tipi di zucchero aiutandovi con una frusta, fino ad ottenere una crema morbida. Aggiungete l’uovo e le farine, il pizzico di sale e la scorza grattugiata di arancia.
Impastate gli ingredienti, formate un panetto e coperto con la pellicola, tenetelo in frigo per circa una mezz'ora prima di lavorarlo. Il panetto è molto morbido, se doveste avere dei problemi durante l’impasto aggiungete un po’ di farina sul piano di lavoro.
Riprendete il panetto stendetelo allo spessore di 5 mm e con un coppa pasta circolare formate i vostri biscotti; sulla metà dei dischetti di impasto fare al centro anche un buco con un coppa pasta a forma di piccolo cuoricino.  Coprite con carta da forno una placca e posizionate i vostri biscotti, leggermente distanziati perchè in cottura cresceranno un poco; prima di infornarli spolverate la superficie con zucchero di canna in quelli con il cuore. Cuocete a 180° per una ventina di minuti.
Una volta cotti , lasciateli raffreddare.  Spalmate la confettura di frutti di Bosco BIO sulla metà dei biscotti circolari e ricoprite a cappuccio con quelli forati.
Spolverateli con lo zucchero a velo ed ora sbizzarritevi con la confezione regalo.... dal cellophan, alle scatole più romantiche legate con nastrini dai colori teneri e delicati.

125 grams of butter
60 grams of sugar cane
65 grams of white sugar
1 egg
grated zest of orange
1 pinch of salt
for cane sugar for the surface

Preparation
Work the softened butter with the two sugars with the aid of a whip, until you have a smooth paste. Add the egg and flour, a pinch of salt and the grated rind of orange.
Mix the ingredients, make a ball and cover with plastic wrap, keep it in the fridge for about half an hour before the processing. The dough is very soft, if you have any problems during the dough add a little 'flour on the work surface.

Take back the dough roll it out to a thickness of 5 mm and a pasta bowl circular form your cookies, about half of the disks of dough to the center of a hole with a cup-shaped pasta small little heart. Cover a baking sheet with parchment paper and place your cookies, slightly apart because in cooking will grow a little, before you bake sprinkle the surface with sugar cane in those with the heart. Bake at 180 degrees for about twenty minutes.
Once cooked, let cool. Spread the fruit jam of Bosco BIO on half of the cookies and cover a circular cap with those ears.
Sprinkle with icing sugar and now get jiggy with gift box .... by cellophane, boxes tied with ribbons most romantic soft colors and delicate.

COSTOLETTA DI MAIALE AL PROFUMO DI CLEMENTINA CON MIELE DOP E BIRRA ARTIGIANALE

Abbiamo appena terminato di parlare di clementine e ho pensato ad una ricetta veramente particolare e buona! Si prepara in circa  mezz'oretta e si fa un gran figurone... garantito!

INGREDIENTI PER 4 PERSONE:
4 costolette di maiale
4 cucchiai di birra artigianale
il succo di 3 clementine
2 cucchiai di miele di castagno DOP della Lunigiana
1 cucchiaio di senape
erbette miste
olio e sale q.b.


Verste in una ciotola capiente la birra, 2/3 del succo di clementina, il miele e la senape: mescolate bene fino ad ottenere un composto liscio. Disponete la carne di maiale in un vassoio con i bordi leggermente alti e spennellate bene con questa marinata... poi versate il rimanente facendo riposare per circa 15 minuti. Riscaldate la griglia o una bistecchiera e cuocete la carne per circa 12 minuti (dipende molto dallo spessore delle costolette), ungendola più volte con la marinata rimasta. Quando la carne sarà quasi cotta versatevi sopra il succo di clementina rimasto, salate. Sminuzzate le erbette e distribuite sulla carne, quindi togliere dal fuoco e servire subito dopo aver condito leggermente con un filo d'olio a crudo.

Questo piatto, secondo me, si accompagna molto bene con patate lesse condite con olio, sale ed erbette...

Consiglio con questo piatto saporitissimo, un rosso RECONTESO dei Colli di Luni...

CUTLET PORK WITH HONEY SCENT OF CLEMENTINE POD AND BEER


We just finished talking about clementines and I thought of a very special recipe and good! It is prepared in about half an hour and there is a great look great ... guaranteed!

INGREDIENTS FOR 4 PEOPLE:
4 pork chops
4 tablespoons of beer
juice of 3 clementines
2 tablespoons of chestnut honey from Lunigiana DOP
1 tablespoon mustard
mixed herbs
oil and salt q.b.


Mileposts in a large bowl beer, 2/3 of the clementine juice, honey and mustard mix well until the mixture is smooth. Place the pork in a tray with the edges slightly higher and brush well with this marinade ... then pour the remaining doing sit for about 15 minutes. Preheat the grill or grill pan and cook the meat for about 12 minutes (depends very much on the thickness of the chops), ungendola several times with the marinade left. When the meat is almost cooked pour over the clementine juice left, salted. Chop the herbs and spread over the meat, then remove from heat and serve immediately after lightly seasoned with a drizzle of olive oil.

This dish, in my opinion, goes very well with boiled potatoes seasoned with olive oil, salt and herbs ...

LE VIRTU' DELLE CLEMENTINE... ottimi agrumi!

Assomigliano al mandarino ma hanno una polpa decisamente più colorata di arancio ed hanno una forma più tondeggiante. Ma è il suo sapore a distinguerle dagli altri agrumi: un perfetto equilibrio fra l'agro ed il dolce che piace anche ai bambini! 

Sono ricchissime di vitamina C, quindi adatte a combattere influenze e raffreddore, ma proteggono anche le nostre ossa perchè il calcio e il fosforo presenti in questo agrume aiutano a combattere l'osteoporosi! Sono ideali per chi segue una dieta vegetariana o vegana, oppure per chi ha problemi di debolezza, perchè la vitamina presente aiuta l'assorbimento del ferro introdotto con l'alimentazione.
Pur essendo dolci e appetitose, le clementine non contengono troppi zuccheri, hanno molto potassio e poco sodio quindi ideali anche per coloro che soffrono di pressione alta. Essendo molto diuretiche sono consigliate per chi ha problemi ai reni in quanto il loro consumo aiuta ad eliminare le tossine presenti nel nostro corpo! Inoltre favoriscono la salute dei denti, delle gengive sanguinanti, aiutano ad espellere il colesterolo dall'organismo ed aiutano a prevenire diversi disturbi quali la tensione arteriosa, la depressione, la stanchezza, disordini dell'apparato digerente e prevengono i crampi muscolari.
Che dire ancora: mangiamo tutti tante, tante clementine!!!

L'AGRITURISMO MONTAGNA VERDE ad Apella

L'ambiente e la natura incontaminata si sposano con l'ospitalità e la gentilezza, valori che hanno un'antica tradizione in queste terre di Lunigiana.
Quel che ci si aspetta da una ottima struttura ricettiva, qui c'è. Ma c'è qualcosa in più: la cornice irripetibile, tutt'intorno, di un paeseaggio vergine ed intatto. Le 12 camere sono doppie o triple, i 6 appartamenti sono per due, tre, quattro persone per un totale di oltre 50 posti letto. Il respondabile dell'agriturismo è Mario Maffei, che, proprio per garantire agli ospiti un soggiorno di grande relax, ha scelto e selezionato con cura collaboratori che fanno del rispetto delle tradizioni, ma anche della gentilezza e del culto dell'igiene, il loro punto di forza.



 Prenotare una vacanza qui nell'azienda agrituristica diMario Maffei, vuol dire assaporare in pieno tranquillità, aria salubre, silenzio, natura, cibo genuino e atmosfera di altri tempi. Siamo nel cuore della Lunigiana, in località Apella di Licciana Nardi (Massa) a 660 mt. d'altitudine sull'appennino tosco-emiliano dove, un tempo, i Malaspina erano signori incontrastati dell'intero territorio.
Ebbene, a ricordare quei tempi antichi, una torre di avvistamento costruita nell'anno 1000 d.c. (ovviamente in posizione strategica) e ampliata a rocca di difesa nel 13° secolo; in seguito, nel 1700 fu elevata a Torre campanaria e abbazia.



La cucina, semplice e curata, propone piatti tradizionali lunigianesi preparati con prodotti biologici sani e genuini, di propria produzione. Le carni (vitelli, manzi e agnelli di razza "Zerasca"), la selvaggina, i funghi freschi e conservati, i prodotti del sottobosco sono materie prime essenziali con le quali vengono confezionati i gustosi piatti che vengono proposti agli ospiti come per esempio:
le torte d'erbe, le pattone (focaccine di farina di castagne cotte in formelle di terra cotta), le tagliatelle ai funghi, i tortelloni di verdura e ricotta fresca, la cacciagione e i funghi cucinati in vari modi, le tagliate di manzo, l'agnello al testo ecc. ecc.

Environment and uncontaminated nature combine with hospitality and kindness, values having a very long tradition in the territories of Lunigiana.
Here you can find what you expect from a very good accommodation facility. But there is also something more: the surrounding frame nowhere to be found as well as an intact and uncontaminated environment.
The 12 rooms available are either double or triple bedrooms, while the 6 flats are suitable for two, three or four people, providing accommodation for over 50 people in total. The person in charge of the agritourist farm is Mr. Mario Maffei and, to guarantee his guests a very relaxing stay, he has carefully selected and engaged his collaborators, who have their strong points in the respect of traditions, in the kindness and in the cult of hygiene.


If you book your holiday in the agritourist farm of Mr. Mario Maffei you will enjoy in full relax, salubrious air, silence, nature, genuine food and an atmosphere of the past. We are in the heart of Lunigiana, at Apella di Licciana Nardi (in the province of Massa), at an altitude of 660 m, in the centre of the climatic region located on the Tuscan-Emilian Apennines, where Malaspina family used to dominate uncontested all over the territory. So, in memory of the past, there is a sighting tower dating back to 1000 A.D. (obviously located in a strategic position), which was enlarged and turned into a defending fortress in the 13th century; later on, in 1700, it was turned into Belltower and abbey. 
This derelict building, seriously damaged in time by the wars and by several earthquake events, in 1995 got back to its ancient beauty thanks to Mario Maffei.

The simple but accurate cooking offers traditional dishes of Lunigiana, prepared with biological healthy and genuine products of our own production. Meat (veal, beef and lamb of “Zerasca” breed), game, fresh and preserved mushrooms and underwood products are the essential raw materials used for the preparation of the tasty dishes suggested to the guests, such as:
vegetable pies, “pattone” (chestnut flour flat bread or “focaccia” cooked on terracotta tiles), tagliatelle with mushrooms, tortelloni with vegetable and fresh ricotta stuffing, game and mushrooms cooked in different ways, thinly-sliced raw beef, baked lamb etc. 
The agritourist farm has six flats and eight rooms with double bed and additional third bed, all equipped with private bathroom.

FOCACCIA ALLA SICILIANA alla moda della mia amica Francesca A.

La mia amica Francesca A. vive in una terra spettacolare ricchissima di tradizione gastronomica. Non potevo non postare questa straordinaria ricetta per questa  FOCACCIA ALLA SICILIANA, perchè solo a guardarla fa venire l'acquolina in bocca. Peccato sia tanto lontana da dove abito io, altrimenti sarei sicuramente andata a dare un bel morso a questa meravigliosa specialità.

INGREDIENTI PER 2 TEGLIE:
500g di farina
25g d lievito di birra
300g di latte fresco
2 pizzichi di sale
2 cucchiaini di zucchero
4 pomodori maturi e sodi
2 cucchiai di olive verdi
200g di prosciutto cotto
8 acciughe sott'olio
250g di formaggio morbido dolce
2 cipolle rosse

Sciogliere il lievito nel latte ed aggiungere lo zucchero; versare il latte al centro della farina e impastare bene aggiungendo man mano il sale. Formare una bella palla e far lievitare in ambiente tiepido fino a che l'impasto non è raddoppiato di volume. Ungere due teglie e dividere l'impasto. Farcite con il pomodoro a cubetti, le olive, il prosciutto cotto, i filetti di acciughe a pezzettini, la cipolla a fettine sottili. Infornate a forno preriscaldato a 200° per circa una trentina di minuti e poi aggiungete il formaggio a cubetti piccolini. Portate a termine la cottura e servite caldissima.


My friend Francesca A. lives in a land of spectacular rich gastronomic tradition. I could not post this wonderful recipe for this focaccia SICILIAN, because just looking at it makes me mouth water. Too bad it is so far from where I live, otherwise I would have definitely gone to take a big bite of this wonderful specialties.

INGREDIENTS FOR 2 TRAYS:
500g of flour
25g of yeast
300g of fresh milk
2 pinches of salt
2 teaspoons of sugar
4 firm ripe tomatoes
2 tablespoons green olives
200g cooked ham
8 anchovies in oil
250g soft cheese cake
2 red onions

Dissolve the yeast in the milk and add the sugar, pour the milk in the center of the flour and mix well gradually add the salt. Form a nice ball and let rise in warm place until the dough has doubled in volume. Grease two baking sheets and divide the dough. Stuffed with diced tomatoes, olives, ham, anchovy fillets into small pieces, the onion into thin slices. Bake in preheated oven at 200 degrees for about thirty minutes and then add the cheese into cubes little ones. Bring to finish cooking and serve hot.
