INGREDIENTI PER 4 PERSONE:
500 gr macinato di manzo bello magro
2 uova
100 gr pecorino romano grattugiato
pepe nero macinato abbondante
farina - pan grattato - farina di mais integrale
Olio per friggere - sale
Unite alla carne macinata un uovo, il formaggio, il pepe macinato a volontà e salate leggermente (già il pecorino conferisce sapidità), amalgamando bene tutti gli ingredienti. Con le mani formate della palline della grandezza delle noci ed infarinatele nella farina bianca, quindi passatele nell'uovo battuto ed infine in una mescolanza in parti uguali di pan grattato e farina di mais integrale. Friggete in olio ben caldo, ma a fiamma moderata in modo che le polpettine si cuociano anche internamente.... scolate dall'olio in eccesso mettendo le polpette su un foglio di carta da cucina. Potete servire bollenti, tiepide ma anche a temperatura ambiente.
Nel caso della "cena della partita" si possono anche servire disponendole in un vassoio dopo averle infilzate con uno stecchino: ciascuno può quindi prendere la sua senza fatica!!!!
