INGREDIENTI PER 6 PERSONE:
1 kg di salmone fresco possibilmente in un filetto intero già spinato
1 kg di sale grosso
1 misto erbette aromatiche (alloro, rosmarino, salvia, prezzemolo, aneto....)
sale e pepe nero in grani
Prima di iniziare dovete accendere il forno al massimo della sua potenza.... così quando il nostro pesce sarà pronto, troverà il forno alla giusta temperatura.
Togliete le squame dalla pelle del salmone e sciacquate accuratamente; tritate insieme tutte le erbe aromatiche e aggiungete un pochino di pepe nero in grani schiacciato grossolanamente in un mortaio. Con questo trito insaporite il salmone in tutte le sue parti.
Disponete la metà del sale in una capace pirofila e sistemate il salmone su una reticola fatta con i bastoncini per gli spiedini: il liquido del pesce potrebbe colare nel sale facendolo sciogliere, conferendo così alla carne una eccessiva sapidità! Il salmone va disposto con la pelle verso l'alto.
Ricoprite tutto con il sale rimasto ed infornate a forno ben caldo al massimo della sua potenza per circa 40/45 minuti. Sfornate e togliete con grande cura la crosta di sale cercando di non rovinare la pelle del pesce: dividete il salmone in filetti e servite subito magari accompagnando da una insalatina di stagione....
Accompagnerò questo salmone con un'insalatina particolare realizzata con verdure tagliate molto finemente (insalata riccia, carote, peperone, cipollotto, cetriolo, limone,....) e condite con panna acida e paprika dolce........ magari con un goccio di succo di limone per stuzzicare il palato!!!!

fresh salmon with salt - INGREDIENTS FOR 6 PEOPLE:
1 kg of fresh salmon fillet preferably in a whole already barbed
1 kg of salt
1 mixed herbs (rosemary, sage, parsley, dill ....)
salt and black pepper
Before you start you have to turn the oven to its maximum power .... so whenour fish is ready, we will find the right oven temperature.
Remove the scales from the skin of the salmon and rinse thoroughly, chop allthe herbs together and add a little crushed black peppercorns coarsely in amortar. With this mixture seasoned salmon in all its parts.
Place half the salt in a large pan and place the salmon on a crosslinkingmade with sticks for kebabs: the liquid might drip off the fish in salt andcausing him to dissolve, thus giving the meat a flavor too! The salmonshould be prepared with the skin upward.
Cover everything with the remaining salt and bake in a hot oven at its maximum power for about 40/45 minutes. Remove from the oven andcarefully remove the salt crust, trying not to damage the skin of the fish:Divide the salmon fillets and serve immediately perhaps accompanied by asalad of the season ....
Accompany this particular salmon salad made with finely chopped vegetables (salads, carrots, bell pepper, onion, cucumber, lemon,....) and seasoned with paprika and sour cream ........ perhaps with a dash of lemon juice to whet the palate!!
